Adam Riess, Founder

Adam Riess founded ProCIBO in July of 2010. Current and former clients include Du's Donuts, Ajjuma, Paowalla, Itani Ramen, Union Square Hospitality Group (Marta, North End Grill, Untitled), The Meatball Shops, True Crafted Pizza, New York Restoration Project, Bridgewater General Store & Bistro and The Katonah Reading Room.  

After graduating with a Bachelor’s Degree from the University of Pennsylvania, Adam opened Doc’s, a critically acclaimed Northern Italian Trattoria in Washington, Connecticut. Adam then began studying at the School of Hotel Administration at Cornell University and graduated with a Master’s Degree. After graduating, Adam sold Doc’s and went on to work as a hospitality consultant for Coopers & Lybrand, financial analyst for The Clark World Company, Director of Finance for The City Bakery Companies, and manager, controller, and member of the opening team for Conte’s Market and Grill.

Adam then worked for Danny Meyer’s Union Square Hospitality Group for six years, first as Gramercy Tavern’s Controller, then as Assistant Corporate Controller for the group, and finally as Director of the New Business Division. In this final capacity, Adam opened Maialino and Sandwiched, a pop-up at the Whitney Museum.

Adam lives in New York City and Washington, CT with his wife, Pamela, and daughter, Lydia and is a Partner in Itani Ramen in Oakland, CA.


Austin Publicover, Specialist

Austin Publicover started Bulletproof! Restaurant Compliance in 2013 and joined the ProCIBO team in early 2014.  Before joining Danny Meyer’s Union Square Hospitality Group in March of 2008, Austin had a deep background in the mechanical, plumbing, and electrical trades and is now an expert in plan review.  Austin loves combining his tradesman field experience with the FDA Model Food Code & the NYC Health Code when reviewing architectural plans and conducting on-site construction rough-in inspections. 

Austin holds many degrees and certifications in food safety, including HACCP certifications from University of Connecticut, Cornell University, National Environmental Health Association, and a soon-to-be completed certificate in acidified foods scheduled process from University of California, Davis.  Bulletproof! is a proud member of the Better Business Bureau and the Central Atlantic States Association of Food & Drug Officials.  Current and former clients of Bulletproof! include Zuma, Les Halles, Munchery, Bâtard, ‘Wichcraft, Juice Generation, Torishin, and Berg’n.
